Stir Fry


One thing I love about this meal.. EASY!
It takes no time at all, the rice itself takes longer!

Meat: this meat apparently has a few names.. usually known as Flank steak, but can also be stir fry meat, and flap meat
I cut it into strips, put it in a plastic bag, and add the following for a small marinade.
1 tsp ginger
1/4 c soy sauce
2 tbsp brown sugar
1 tsp white wine vinegar
Honestly.. I eye ball all of these ingredients, but those are the approximate measurements I use. I let it marinade for 30 minutes or so.

The nice thing about this stir fry.. you can make it your own. You can add any veggies you like. I add a lot of veggies sometimes, but the other night I just used yellow, orange, and red peppers. You first saute your veggies with a little olive oil.
After they are cooked, remove, and add meat with juices and all. After the meat is thoroughly cooked, add veggies and mix. Serve with steamed rice.

Hawaiian Chicken


One thing I usually have to steer clear from when cooking for hubby is sweet. He just does not like it with meat.. which isn't a big deal, some aren't. I found this recipe in a Taste of Home Mag--I am a huge fan of Taste of Homes-- and changed it a bit. Needless to say, it is similar to a sweet and sour chicken flavor, and has become one of my husband's favs...which is saying a lot! ;-)

1/2 c flour
boneless chicken breasts
3 tbsp oil--canola or vegetable, healthier way--> vegetable
2 c sugar
2 tbsp cornstarch
1 tsp chick granule
1/4 tsp ginger
1 can 20 0z-- pineapple
1/2 c cider vinegar-- I use apple cider vinegar
1 tbsp soy sauce
1 med green pepper

Combine flour with some salt and pepper in a plastic bag or bowl. Coat chicken, and cook in oil to brown. Place in a casserole dish.

In a sauce-pan, combine sugar, cornstarch, chicken boullion, and ginger. Drain pineapple juice in a 2 cup measuring cup. set pineapple aside. Add water to measuring cup and juice until it reaches 1 and 1/4 cup. add vinegar and soy sauce, and pineapple juice to sugar mixture. whisk, and bring to a boil. Stir for a bit so it will thicken.

I don't have cornstarch, but it is a thickening mechanism which is similar to flour. So if you dont have cornstarch just add a little flour instead. If the mixture doesn't thicken up after stirring, add a little more flour and let it boil a little longer till it is the consistency you want it to be at.

Pour the sauce over the chicken, top with green peppers and pineapple. bake at 350 for 20-30 minutes.

I served this with rice and a homemade vegetable medley--this meal is delish, definitely recommend! :)

Parmesan Stuffed Chicken


What better way to begin a blog than with one of my favorite recipes to make?

One of my all time favorite recipes to make is a Parmesan Stuffed Chicken.
Who doesn't love a dish with cheesy-ness oozing out with marinara and pasta?
I think of it as comfort food. If I want to make a hearty meal.. this is something I always consider.

I got this recipe from a friend I have known forever, Amber Seay. I enjoy getting other recipes, and twisting them a tiny bit. Her recipe was so yummy, and I had to make it my own a little!

Oven--400

Chicken breasts
1 c mozzarella
1 c flour
2 eggs
1 c bread crumb/parmesan mixture

Marinara--your choice, I enjoy using Classico Roasted Garlic
Pasta--your choice, I enjoy using 3 cheese tortellini

You place the flour in one bowl, eggs in another, and the bread crumb mixture in another.
You will dredge the chicken in a pattern of flour, egg, and bread crumbs. Then use the mozzarella and stuff the chicken. The way you do this is your own preference and what kind of breasts you are using. If mine are thick I will cut them in half and stuff the cheese in the side.. if they are large I will put cheese in the middle and fold the breast in half. You may also use toothpicks to secure them to keep the breast closed if needed.

Place chicken in a casserole dish.

Take the marinara sauce, and pour in the casserole dish with chicken, filling the empty spots in your dish.
Bake for 40-50 minutes. Last 5-10 min you may add mozzarella on top to melt

Serve with your pasta, and maybe some yummy garlic bread and a salad! :)

I always want to blog, but I never know what to say, or write.. I am never sure if people want to really know about my daily news, to me it isn’t too exciting..

Where do you start with a cooking blog!?
I don’t know..
but I guess I will start with why


I decided to start a cooking blog because I do get frequent texts, emails, etc of new recipes, so why not share them to many other people? Cooking has become a hobby of mine. I love the southern type of cooking. I like to give someone a loaf of bread just because, bake a cake because it’s your birthday, or bring a meal if you’ve been stressed. I enjoy cooking for others. I feel like it is the “Remmel” side of my family I got it from. On my mother’s side of the family, my great Grandma Remmel would cook and watch everyone enjoy her meal. She wanted to make sure everyone was “fat & happy” so to speak. I notice I at times.. I am the same way.
Growing up I didn’t really cook at all.

For those of you that come across this page and do not know me, my name is Brandee. I am 25 years of age, and am currently going to National University in La Jolla, Ca, majoring in Early Childhood. I will receive my Bachelors in May –whoot!I enjoy cooking, obviously, reading, shopping, laughing with my girlfriends, and reality television. I currently live in California, but am from Texas. Not my choice, promise. Im a Texas girl at heart, I just fell in love with a Marine.
I married this wonderful man, Shelby Adam when I turned 21. Shelby and I began dating in high school, and I cannot tell you enough how lucky I am to have this man as my husband. He joined the USMC in 2003, and will be getting out at the end of June this year. We have a lot to look forward to this year.

Not only am I lucky enough to have Shelby as a husband, but I have this perfect little princess as a daughter. Miss Reese Ann is 8 months old and a pure joy in both our lives. She is so much fun, our little sassy Diva, and I swear if you see Reese in public she always has a bow in her hair. Love it! :-)


When I married Shelby, I knew as a wife’s duty you should cook your husband dinner. My husband didn’t have the best upbringing. No offense to anyone, but I flipped when Shelby wanted to make mashed potatoes and said we needed hungry jack. He didn’t know how to make homemade mashed potatoes. He knew very little about a full on home cooked meal. It couldn’t help but make me feel a little spoiled. So, it kind of ended up being my motivator. My husband and I both enjoy cooking now, and do almost everything homemade. With having Reese, I have also been making her homemade baby food. It is a chore sometimes, let me tell you. But I wouldn’t have it any other way.

We love to have people over for dinner parties just to entertain and cook for great company.
